Madre Cocina y Lounge, located at 214 Linden St., is on track to become a premier destination for Mexican cuisine in Fort Collins. The restaurant is owned by Graciela Lucero and Armando Chavez, who have a deep-rooted passion for bringing their culture to the community, they tell What Now Denver.

After years of operating Taqueria Los Comales, Lucero and Chavez saw an opportunity to transform the former Blind Pig Pub space into a new concept. They signed a lease for the Old Town property in February. 

“Our concept is going to be Mexology. Crafted syrups and mezcals and tequilas are all going to be a huge part of our project,” shares Daniel Chavez, the couple’s son. “We’re super, super excited to get started and bring Fort Collins a new taste of Mexico.”

Lucero and Chavez both came from Mexico to start a new life in Northern Colorado. Starting with opening Taqueria Los Comales, they take pride in making sure the area has a place with quality Mexican dishes.

The menu at Madre Cocina y Lounge will feature “upscale Mexican food” with a focus on quality cooked meat. Renovations to the space include cosmetic changes, from the floors to the bathrooms. The family also has most of its team hired.
