Aspen One’s latest culinary venture, AJAX Downtown, is set to grace the vibrant Union Station neighborhood in August, the Denver Post reports. A sister concept to the glitzy ski town’s AJAX Tavern, the venue will be taking over for Citizen Rail at 1899 16th St Mall.

Citizen Rail, located adjacent to Limelight Denver, just recently announced it is preparing to close its doors on June 29th. Some of that business’s staff – including Executive Chef Jared Becker, Director of Food Jennifer Lordan, bartender Matthew Gotlin-Sheehan, and pastry chef Gaby Navas – will stay. 

AJAX Downtown promises contemporary American cuisine in an upscale yet comfortable urban setting. It will use coal-fired cooking techniques on a Josper Grill in homage to the open-flame cooking tradition at AJAX Tavern in Aspen, and have a secret menu. 

Since 1989, AJAX Tavern has been Aspen’s go-to spot. Located at the base of Aspen Mountain, the iconic restaurant is renowned for its exceptional cuisine and après-ski drinks.
