The eagerly awaited Populus Hotel, set to open this summer at 240 14th St., has finally teased details about the food and beverage options that will be on-site. Stellar Jay will be the name of the rooftop bar and restaurant concept at the resort, the Denver Gazette reports.

Named after the vibrant Steller’s Jay bird, the venue will offer breathtaking views of Denver’s skyline and the Rocky Mountains. The design will feature both indoor and outdoor dining areas, including a private dining room for special occasions. Décor will mimic the lush canopy of a forest.

Stellar Jay will be helmed by Executive Chef Ian Wortham, who brings a wealth of experience from acclaimed Colorado establishments like Frasca Food and Wine and Tavernetta. Its menu will highlight wild game, farmed meats, and fresh seafood, all prepared over an open flame.

As part of its commitment to sustainability, aligning with the Populus Hotel’s goal to be the first carbon-positive hotel in the United States, the eatery will use a “biodigester” to turn food waste into compost, supporting local farms and creating a circular food system.
