New Waterloo, a renowned independent hospitality management company, has unveiled plans to introduce a new restaurant called Hai Si in Aspen. Expected to open its doors in early 2025 at 308 E. Hopkins Avenue, it will be an underground Japanese izakaya concept.

This venture will be in collaboration with Chef Yoshi Okai and Infinite Hospitality, a recent press release states. Okai is celebrated for his groundbreaking work at OTOKO in Austin, Texas, and has been deemed 2024 Chef of the Year by the Industry Excellence Awards and Food & Wine magazine’s Best New Chef in 2017.

The establishment will boast a full bar, sushi bar, and a diverse menu featuring both hot and cold dishes, alongside an extensive wine and sake list. Those attending the Aspen Food and Wine event this summer will have the opportunity to get a sneak peek of Hai Si and witness Chef Yoshi in action. 

Hai Si’s interior will be divided into four distinct spaces – the bar, sushi bar, dining room, and private dining room. Each element of the decor has been carefully selected to evoke intimacy, setting the stage for an unforgettable experience.
