The incoming Wedo’s will open at the former Fort Collins Cacciatore – 1939 Jessup Dr Suite 110, Fort Collins, CO 80525 – according to the Coloradoan. Heller’s other Cacciatore location in Windsor will remain open and unchanged.

Cacciatore’s Fort Collins location opened in 2017 in Jessup Farm Artisan Village and expanded into a neighboring space more than a year ago. However, despite ballooning the building, Heller maintains the Fort Collins location was just too small to house its concept.

The Coloradoan explains, “Fort Collins’ Cacciatore at Heller’s Kitchen location could seat only 90 diners compared with the 161 seats available in Windsor.”

Thankfully, Heller, who owned Island Grill from 2000 to 2004, has ample experience in the taco realm and is eager to replace Cacciatore with a more casual concept.

Wedo’s will offer standard yet delicious appetizers, tacos, tostadas, and margaritas in addition to more ambitious creations like birria tacos, duck confit tacos, and fish tacos.

“The tacos will be sold individually, with a planned price point between $4.50 and $9 per taco,” according to Heller.
