Sexy Sammies Spreading the Heat to Fort Collins

Hand-breaded, "all-natural" spicy fried chicken bites coming to North College late in 2023.

Sexy Sammies is spreading the heat across Northern Colorado, moving across the I-25 northwest from Greeley into Fort Collins (per The Coloradoan). Though still in the city planning stages, Sexy Sammies founder Brian Seifried hopes to open the new locale at 1298 N. College sometime late in 2023. This is the continuation of a dream that began with the first Wing Shack in Greeley in 2004.

“We live, work, and play in Northern Colorado. This is where we raise our families and who we want to be,” Seifried said in a conversation with What Now Denver.

Along with Luna’s Tacos & Tequila, Sexy Sammies and Wing Shack form the Centennial Hospitality Group umbrella. The Fort Collins Sexy Sammies will be the third iteration of the spicy, hand-breaded chicken joint. The first Sexy Sammies went live next to the Wing Shack on 10th Street in Greeley soon after pandemic restrictions began to ease in early 2021. The second Greeley spot just opened this past November. Ironically, it was the pandemic slow down that led to the restaurant’s existence.

Seifried told The Coloradoan that the COVID-19 induced slowdown encouraged experimentation with an updated breading mix. After perfecting a new recipe, the fresh fried chicken led to another Centennial spinoff. Despite the complex flavor, Sexy Sammies offers a simple, classic menu for consumers: “all-natural” classic chicken tenders and sandwiches doused or to dip in a variety of “signature sauces” — habanero garlic ranch, sweet chili, honey mustard, and barbecue. Accompanying hand-breaded fried chicken are sides like fries, fried pickles, and coleslaw. There are also green salads for a little fiber and palate variety. The “all-natural” designation refers to Sammies’ vegetarian-fed chicken that stays juicy via air-chilling instead of water dousing.

Keeping with the Centennial mission to dig into the North Colorado culture, the N. College Ave. setting has been home to several Fort Collins eateries hailing all the way back to the 1950s when the original building housed an A&W drive-in. The upcoming building’s last iteration, a Western States Bank, still sports a drive-up bank teller window, which Sexy Sammies will utilize for drive-up customers. Inside, the new restaurant’s approximately 2,700 square feet, patrons can sit-down dine with soda, craft beer, and cocktails to accompany pick-up orders from contactless ordering kiosks.

“We’re taking classic chicken tenders and wrapping it in a modern package,” Seifried said.

Along with a “fresh exterior facelift,” Seifried said the classy interior will be designed by Seifried’s good friend, studio designer Jeff Eyser. His Los Angeles studio production group, Flip This Bitch, has provided set work for a number of reality shows including 12 episodes of The Real World from 2016-2017. Eyser’s been “a big part” of the Centennial Hospitality’s footprint since 2018. That will continue with the Fort Collins Sexy Sammies later in 2023.
