Franchisees Jason and Marilyn Scoby are the owners of the location. They are also looking for spaces for two other Capital Tacos in Northern Colorado.

This new location is in the same shopping plaza as the Loveland Target, located off a main road in a busy part of town. The Capital Tacos will take the place of the now-closed Matador Mexican Grill.

The brand, which is a Florida-based enterprise, specializes in Tex-Mex-style food. All dishes at Capital Tacos are from a chef-crated menu and made from scratch. The company offers catering services and a rewards program for its loyal customers.

Capitol Tacos did not respond for comment, but did post on social media two weeks ago stating that the Loveland location is “coming soon.”
