Records show that CAVA, a Mediterranean food concept, is growing its Denver roots, adding a location in Green Valley Ranch. City permits show the brand wants to build a location at 4871 N. Tower Rd – Suite 100.

There are several permits in progress with the City and County of Denver. Data shows the plans include a building with outdoor patio seating, a drive-thru lane, and 32 parking spots. It appears the landlord is also proposing a dentist’s office be built alongside it. 

The building will be a “steel structure with a combination of brick, stucco, and metal panel facades,” records state. Ridgetop Engineering and Equity Ventures Commercial Development are listed as partners on the permits. 

CAVA was created 13 years ago by three lifelong Greek friends who wanted to start a concept that cherished the best parts of Mediterranean cuisine. The brand has juicy Kalamata olives, fresh pita, antibiotic-free protein options, creamy tzatziki and hummus, and more.
