As the anticipation builds for the grand opening of Longmont’s Parkway Food Hall, the community has expressed about all the options that will be available under one roof. Recent press shows that Pie Dog Pizza will be one of the tenants at the property — located at 700 Ken Pratt Blvd Suite 200.

Pie Dog, the brainchild of Lisa and Patrick Balcom, is set to bring a taste of the Big Apple to the local scene with its signature Neo-New York-style pies. The business started as a carry-out concept located within the couple’s other restaurant, Farow. 

Balcom tells What Now Denver that Pie Dog’s commitment to quality starts with its dough; it’s made from a special blend of fresh milled, organic heirloom flour and undergoes a meticulous three-day fermentation process. The pizzas are topped with Bianco Dinapoli tomato sauce and locally sourced ingredients such as sausages from Longmont’s Buckner Family Ranch.

“We’ve had so much good fortune in finding others to work with who are excited to bring great food to Longmont and I think this new hall is going to be just what Longmont needs to bring more great entertainment options to the city,” Balcom was quoted as saying in a press release.
