New Food Truck to Provide Eats and Drinks in Larimer County

With a new menu and a new food truck, Annie Erickson plans to offer a new concept with SweetRiver and Sage in Larimer County this spring.

Prior to the pandemic, Erickson owned a food truck under the name, Don’t Gluten Me, Bro. She parted ways with the investor, the business dissolved, and Erickson decided to downsize and rework her business model. “It’s been a long time that we’ve been trying to reopen,” Erickson said.

“It’s like a one-woman show,” she shared. “It’s just me working for myself.” SweetRiver and Sage, named after Erickson’s two sons, River and Sage, will offer a rotating menu of dishes for everyone to enjoy, including guests with food allergies.

Erickson is celiac, so she’s had to adjust how she cooks to meet dietary needs. “It’s been a lot of adapting,” she said. “Fresh, local stuff that nourishes you and makes you feel full but is always satisfying.”

From Omaha, Erickson puts a unique spin on traditional Midwestern comfort food. The menu will include chili, soup, bean dip, queso dip, roasted veggie bisque, cinnamon roll donuts, and more.

Walking tacos will also be a convenient option. “It’s in a mini bag of chips, and it’s a scoop of chili, scoop of queso, taco crumbles, pico,” she explained. “It’s nice because it’s event friendly, but it’s also portable for in the car.”

SweetRiver and Sage will rotate the menus for salads, desserts, donuts, hot cocoa, and Yerba Maté, which is a caffeinated tea. This summer, they also plan to serve shakes.

The SweetRiver and Sage food truck is expected to set up at Estes Park breweries including Avant Garde Aleworks and Rock Cut Brewing Company. Erickson also plans to offer food truck services at other breweries across Fort Collins and Loveland, as well as cater, attend public and private events, and provide free cooking classes.

Plans are to open in Larimer County this March and get permits to serve in Boulder and Denver Counties this summer.

Along with the food and drink menu, SweetRiver and Sage will feature handmade jewelry from Erickson’s teenage daughter, Addy. SweetRiver and Sage is definitely a family operation with something for all generations.
