Longmont will welcome a new addition to its vibrant Main Street District in a few months: Red Cedar Bistro. The business’s owner tells What Now Denver that the concept is projected to open in July at 516 Main St.

An upscale Mediterranean-inspired restaurant, it is gearing up to offer patrons an experience that blends Spanish, French, Italian, Greek, and Moroccan cuisine. It is co-owned by Sandy Shore and Larry Shore, and will be sure to captivate the city’s downtown scene for lunch, dinner, or Sunday brunch.
Sandy tells What Now Denver the lease has been signed and minor renovations are underway. Upcoming changes include a new rear entrance hallway, a new facade, and an updated bathroom. There will be a cozy sidewalk patio and a rotating art gallery at the property as well.
The menu at Red Cedar Bistro emphasizes scratch-made dishes prepared with the finest locally sourced ingredients. Guests can expect to indulge in delights like Wild Mushroom Crepes, Southern Fried Raviolo, Lamb Bolognese, Catalan Branzinoeach, and more. There will also be a full bar offering an impressive selection of cocktails, craft beers, and wine.
