The Denver City Council approved plans to allow Santo to move into the Denver International Airport. The Colorado-bred brand will be in Concourse C at the 8500 Peña Blvd. property, 9 News reports.

Santo is the creation of Chef Hosea Rosenberg, who also owns Blackbelly Market and Butcher and was on the Top Chef television competition. He founded the concept as a nod to his roots from growing up in Taos, New Mexico, with Hatch green chile as a staple.
The menu is a mix of Spanish, Native American, and Mexican foods, with a bit of a kick. Santo offers breakfast, lunch, and dinner service and incorporates a mix of grab-and-go, counter service, and seated dining. The Boulder location also has an outside patio.
Some menu items include stacked blue corn enchiladas, a smashed green chile cheeseburger, wood oven half chicken, seared duck breast, and more. There are a number of gluten-free, dairy-free, and vegetarian options, and ingredients are sourced from local farms. Santo’s drink menu has tequila and mezcal options.
