Family-owned outpost brings a fusion of Mexican flair and craft beer to RiNo Neighborhood

BrewDog USA officially opens the doors of its new Denver brewery this Friday, April 19 in the popular RiNo neighborhood between 38th and Blake RTD station and the Mission Ballroom. Owned and operated by Hop Dragon Holdings, a Denver-based family business founded by Juan Carlos Mondragón, son Eduardo, daughter Paloma and her husband Elliot, the outpost serves BrewDog’s well-known Headliners like Cold Beer, Elvis Juice and Punk IPA and classic bar food, in addition to Denver-exclusive Mexican specialties and other local Denver brews on tap.

“This is an exciting step for BrewDog USA as we welcome our first-ever franchised location stateside,” says BrewDog USA CEO John Graham in a statement. “BrewDog Denver has been an incredible journey for us and the Mondragon family, who have created a unique BrewDog experience. Bringing their Mondragón family recipes to the menu alongside their relentless passion for this project, we’re thrilled to be entering the incredible craft beer scene here in RiNo and the Mile High City.”

To celebrate its grand opening, BrewDog Denver is kicking things off with music, giveaways and more when doors open at noon. To begin, a bagpiper greeting will honor the brand’s Scottish roots while later in the day, a mariachi band will continue the festivities, paying homage to the Mondragón family roots. The first 200 guests through the door will be entered into a raffle to win prizes, including a VIP table giveaway and – for one lucky winner – the ultimate grand prize of a trip to BrewDog’s home in Scotland that includes a stay in the Doghouse Edinburgh hotel and a visit to the BrewDog Brewery HQ in Ellon. Furthering the Scottish lore, those bold enough to wear a kilt will be given an exclusive additional entry to the giveaway as a “thank you” for joining in on the fun.

BrewDog Denver will offer the brewery’s classic culinary offerings like burgers, giant pub pretzels, salads and wings, along with Mexican specialties curated from the Mondragón family’s treasured recipes. Think carnitas tacos with avocado-tomatillo salsa, pickled onions and cilantro and carne asada with seared prime flat iron steak, spicy avocado crema, pico de gallo and guacamole, plus dishes like cochinita pibil with slow cooked pulled pork marinated in orange and achiote, pickled habanero and red onion, and al pastor with freshly sliced marinated pork and pineapple.

On the beverage side, BrewDog’s Headliner pours are complemented by Denver-exclusive brews like Mile High Cerveza (3.5% ABV), an American lager with a hit of lime, and rotating tap selections including Odell Brewing, Great Divide Brewing, Left Hand Brewing, Incantation Brewery and Reverence Brewing to continue the brand’s commitment to support the Denver craft beer scene. Additionally, BrewDog Denver is equipped with its own on-site brewing capabilities, with specialty brews to be released seasonally. Guests can also choose from cocktail selections ranging from margaritas to mezcalini with tamarind and lime, along with wine, BrewDog’s nonalcoholic brews and mixed drinks featuring whisky, gin and bourbon. In the coming weeks, drip coffee, lattes, cold brew and more will be served in partnership with local Bluegrass Coffee Company.

The 10,000 square-foot- indoor/outdoor establishment includes a taproom, in-house 3.5bbl brew kit and two patios facing north and south. Guests have access to BrewDog’s guided Beer School tasting experiences and plenty of games like shuffleboard and old school arcade video games for some competitive fun.

“This is a dream come true for our family,” says Juan Carlos Mondragón. “We’re excited to showcase our amazing location and family recipes alongside BrewDog’s innovative brews to create an unforgettable experience for our Denver community.”

BrewDog Denver will be open seven days a week from 11 a.m. to 11 p.m.
