Brand new resort Trailborn Rocky Mountains will open its restaurant concept soon, according to the company’s website. Called Casa Colina, the eatery will serve breakfast and dinner at the 130 Stanley Ave. property in Estes Park.

Casa Colina is a Mexican-American eatery with a tequila and mezcal bar. It’s located off the main building’s lobby and features floor-to-ceiling windows with views of the forest, an outdoor patio, and seating for 100 guests. 

The breakfast menu, served from 6:30 A.M. to 11 A.M, consists of coffee, breakfast tacos, oats, pastries, and parfaits. Dinner options, available from 4:30 P.M. to 10 P.M., include appetizers, tacos, salads, sandwiches, and a kid’s menu. There are also beers, wines, cocktails, mezcals, tequilas, and other spirits. 

Trailborn Rocky Mountains is an 86-key property that just opened in downtown Estes Park. The rustic-meets-modern lodge features amenities like pools, fire pits, two markets, free bike rentals, lawn games, yoga classes, and kids’ activities.
