The next couple of years will be busy at Denver International Airport as the expansion continues to provide space for restaurant and retail concepts. ChoLon Modern Asian is expected to open sometime in 2023 near the airport’s East gates at Concourse C.

ChoLon Restaurant Concepts, founded by Chef Lon Symensma and Christopher Davis-Massey, opened the first ChoLon location in Downtown Denver back in 2010. The team added a second spot in Central Park, and another location at 4200 W. 17th Ave. near Sloan’s Lake is currently in the works.
The ChoLon menu include small bites of Michelle’s Scallion Pancakes, Crystal Shiitake Mushroom Dumplings, and “General Cho’s” Soup Dumplings. Small plates such as Charred Asparagus Salad and Ribbons of Salmon or large plates of Spring Vegetable Fried Rice and Tandoori Lamb Chops are also available.
ChoLon means “big market” in Vietnamese and is named after the largest Chinese-influenced market in Saigon, according to the brand’s website. ChoLon’s menu features dishes found across the Far East coupled with Chef Symensma’s experience in classical European training.
