Five Times Hospitality Group partner Christopher Lee told What Now Denver that they purchased the plot of land at 1895 Democracy Pt. in Colorado Springs about five years ago, and the ground-up construction started just over a year ago. They hope to open the four restaurant concepts by the end of August or in September.

“Building four restaurants at once,” Lee said, “we’re going to need in excess of 100 employees. The labor pool is what’s going to dictate whether it’s simultaneously or if it’s delayed two weeks, three weeks.”

Chuck Schafer, who owns Prime 25 in Colorado Springs, is also a partner with Five Times Hospitality Group. The group developed the four new restaurant concepts specifically for the Colorado Springs project.

Manhattan Room will be a live music venue at the development and will feature a tapas, shareable food concept, perfect for a date night or evening with family and friends. Classic cocktails such as the Manhattan, old fashioned, and martinis will be featured on the bar menu.

Cansano Italian Steakhouse will institute flavors and techniques from the Abruzzo region and Central Italy into the cuisine. Cansano will also feature an in-house aging program for its local prime cuts of beef. “We’ll have the ribeye, the strip, and the filet, but it’s going to focus on the hand-made pasta program and also Neapolitan pizza,” Lee explained. A pasta room adjacent to the restaurant’s entrance will showcase the creation of seven or eight types of pasta. Italian and new world wines will be available.

Longboard Tacos will be the third restaurant on the bottom level. It will offer a coastal feel with Baja street tacos. “We’ll be doing our own tortilla shells in-house. We’ll be using techniques that you would find in Mexico,” Lee said. Unique taco fillings will include pastor, barbacoa, and carnitas. “It will be more authentic to that healthier style with the Calfornia influence.” The drink menu will include freshly-squeezed juice margaritas, frozen drinks, and beer on tap. “That concept would be like that fun, vibrant, come-as-you-are, enjoy yourself, no expectations.”

And finally, guests can take an elevator or the stairs to enter Pause Ultra Lounge & Sushi, which will be located above Longboard Tacos. It will offer an urban sushi bar featuring classical Japanese techniques with an American flare. The menu will concentrate on the freshness of seafood.

Chef Kevin Lalli will be involved in the menu creations for all four concepts. “He will be our showcase chef on the property,” Lee shared.

Are there any plans for a grocery story, i.e. King Sooper, WalMart or Safeway in the near future? We have an overflow of restaurants already.
