Who doesn’t love an empanada? The Denver area going to have more of the flakey pastries with empanada shop: My Empanadas set to open soon in Fort Collins on 1228 W Elizabeth St.

When What Now Denver talked with co-owner Morgan Chable, we were told that they hope to open by early September, but that there isn’t a set opening date yet. The empanada shop is co-owned by husband and wife duo Morgan and Azael. “Six years ago the dream-team met at the Sea Breeze cafe near the beach in the Sunset District,” according to their official website.

The two make a great duo for empanadas as “chef Azael re-crafts his mother’s old recipes— including the authentic Mayan Cochinita Pibil and Chimole — both meats slow roasted in banana leaves for hours in special spices and herbs.” And “Morgan influences from her Dutch European heritage, the flaky, buttery, amazing crusts and dough!”
