A food truck concept popularized in Texas is being planned for Downtown Denver. Twisted Eatery Denver is expected to open in March at a cloud kitchen at 810 Vallejo St., Denver, CO 80204.
Co-owner and chef Ashlee Cassity told What Now Denver the Twisted Eatery Denver menu will be developed in the cloud kitchen for about a year before a brick-and-mortar restaurant will open.
“Where we are in the pandemic,” Cassity explained, “and also no one knowing who I am as a chef and what Twisted Eatery is, I thought it would probably be the best route to do the cloud kitchen. It was definitely a blessing in disguise.”
For now, the kitchen will offer pickup and delivery options through delivery platforms or the Twisted Eatery Denver website, which is still in development. Some outdoor seating is available, as well as a small lobby with limited space.
According to Instagram, Twisted Eatery Denver will serve “a twisted menu and exotic snacks.” The menu will feature loaded elote fries with roasted corn, cotija cheese, and a Sriracha crema. “It’s packed full of flavors. It’s one of our biggest sellers in Texas.”
Loaded fries with buffalo chicken and blue cheese aioli, Cajun po-boys with garlic butter sauce, Cajun brown gravy, and jalapeno mayo, and a variety of unique burgers will be offered. One burger called The Godfather features fried mozzarella sticks, homemade garlic aioli, and Cajun bacon.
“A lot of the food is inspired from my southern roots,” Cassity shared. Twisted Eatery Denver will also feature loaded franks and an adult version of the sloppy Joe.
Once the website is up and running, Twisted Eatery Denver will also offer retail items including bottles of Cassity’s house-made sauces and seasonings. Mystery boxes will feature uniquely flavored snacks, cereals, candies, and drinks from overseas and the U.S. They can be shipped anywhere in the U.S. or ordered for pickup at the Vallejo St. location.
