A Denver restaurant featuring a menu of worldly influence is reopening in a new location. Botellón Spanish Tapas & Wine is tentatively set to open at 2124 Larimer St. in Denver in late August or early September depending on renovations and licensing requirements.
“We’re pretty excited right now. It’s a lot of work. It’s a little frustrating at times, but it will be super exciting at the end,” said Botellón Spanish Tapas & Wine owner and chef, Simon Tran. They have to do some buildout at the new space and bring in new furniture and equipment, plus hiring.
The original Botellón Spanish Tapas & Wine closed its location at 1618 E. 17th Ave. during the summer of 2021. The new location will feature a rooftop terrace with seating for about 100, as well as indoor dining space and a street-side front patio.
Tran told What Now Denver they are still working to finalize ideas for the rooftop. “It’s got one of the best views in the city,” Tran shared, “so we have to do something cool with it.”
Botellón Spanish Tapas & Wine will offer a full bar and a menu of Spanish cuisine in tapas style. “It’s very reminiscent of classic Spanish food, but it’s also very Mediterranean, world influence, as well. There are ingredients and techniques from around the world,” Tran said.
“Some crowd favorites that I have, definitely the paellas that we serve,” Tran said, “then, a lot of my customers really love the octopus that we put out.” Botellón Spanish Tapas & Wine’s octopus has been braised and grilled over, and the restaurant’s paellas are created fresh. All sauces are made in house.
