Insomnia Cookies will soon start work on its third Denver location, bringing sweet treats day, night, or late night to downtown denizens. According to a recent permit, construction will commence soon at 1370 19th St., close by the Insomnia Union Station location and north of the University of Denver shop. The bakery specializes in serving up a variety of just-baked, warm cookies until 3 a.m. Customers can check in at the counter or call up for delivery almost all hours of the day, usually beginning by 10 a.m. for morning cookie cravers. These fresh-from-the-oven snacks make great additions to individual lunches as well as to business meetings and offices. Popular cookie styles include (of course) Chocolate Chunk along with chocolate peanut butter cup, Snickerdoodle, and the S’mores. Insomnia even offers the cold milk to wrap the dessert package in a bow.

For party planners, Insomnia also bakes up and delivers cookie cakes and brownies with available toppings like cookie dough and M&M’s. And for folks that prefer their cookies as sandwiches, Insomnia will stuff ice cream in between two round biscuits of a customer’s choice.

With Insomnia replacing an existing store in this location, construction should not take long and a new Insomnia should be gracing downtown sometime early in 2023.
