Zach Spott, the chef behind Green Seed Market and Brass Tacks is opening a new restaurant in Denver Central Market: Lunchboxx. The restaurant is set to open some time next month.

The concept of Lunchboxx is going to be around boxes or “boxxes.” Think: Japanese style bento boxes, Mediterranean grills, Vietnamese lettuce wraps and deli offerings. They plan to develop the menu further as they go, with a brunch and late-night menu planned as well.

Familiar with Denver Central Market thanks to Green Seed, Zach Spott teamed up with food-writer turned chef Ben Whelan to open Lunchboxx. Whelan also has extensive experience working in kitchens across the country and even in Thailand.
