Colorado Springs restaurant Pizzeria Rustica will join the other concepts that are being added to the list of concession options at the city’s airport. The eatery is one of nine companies that will be tenants at the 7770 Milton E Proby Pkwy property, according to the Gazette

“We are so excited to share that we are headed to the COS airport!” the business announced on Facebook recently. Patrons commented that they are excited to see the concept — which is a 4-Star Certified Green Restaurant — expand. 

The eatery is a Neapolitan-style pizza place with fresh dough and cheese made daily, sauce made from tomatoes imported from Italy, and hand-crafted beers and wines. At the Colorado Springs Airport location, there will also be breakfast plates, salads, and desserts on the menu. 

Pizzeria Rustica’s original location is in Old Colorado City, in a  historic building from 1889. The owners also run Tapateria, a Spanish wine and tapas bar that is a block away.
