Indian Bites is a family-owned eatery that specializes in authentic cuisine from India and Nepal. The first Indian Bites is set to open in Longmont this summer.
“We believe in giving the best,” said Gitanjali Shrestha, Indian Bites owner. Her husband, Bhaskar Shrestha, will be one of the chefs at Indian Bites.
“Indian food is really healthy,” Gitanjali Shrestha said. “We really thought that there was a need of an Indian restaurant with the authentic taste, so we just want to make that happen for people.”
Indian Bites will feature authentic dishes, catering more toward North Indian food. Her favorite is Chicken Tikka Masala with a tomato and onion sauce. “We put grounded ginger, garlic, coriander, cumin, and different herbs from India along with turmeric,” she said.
“For the spice, we can do as per the taste. It could be mild, medium hot, extra hot. We make it with love. That is very important,” Gitanjali Shrestha told What Now Denver.
She has ordered décor from Indian to create a cultural ambiance inside Indian Bites. “When people are entering our restaurant, I want them to have that ambiance. That is important to me,” she said.
Indoor seating will be available at the new location, and an outdoor patio could be added by summer of 2023. Indian Bites will be located at 1134 Francis St., Longmont, CO 80501 and is expected to open by the end of June depending on license approvals.
