A local Greek restaurant will open a second location in Pueblo West at 130 Tiffany Dr. Shah’s Kabob & Gyro, a family-owned business, is building a drive-thru eatery at the site, which consists of three empty lots, according to the Pueblo Chieftain.

The publication reports that the metro district board of directors approved granting the business a water tap. Pueblo West recently instituted a cap of 400 water tap approvals per year. 

Shah’s Kabob & Gyro is owned by a father-son duo that started the company as a food truck in 2015, eventually moving to a storefront in Pueblo in 2018. 

The new location will be larger, with a 2,600-square-foot footprint and seating for about 50 patrons. Owner Andre Shah told the publication they will be breaking ground soon. 

Pueblo West’s Shah’s will feature the same menu as the original location. It will operate five days a week, serving Greek and Mediterranean fare with a twist: gyros,  shawarma, fries, and tater tots.
