If you plan to do a little shopping at the Denver Premium Outlets, don’t forget to stop by Marie’s Taqueria. The restaurant is planning to open its second Thornton location at the Outlets this summer, according to the City of Thornton Economic Development Office.

Marie’s Taqueria owner Augustine Bautista was hoping to open sometime in May, but permitting and inspections might push the opening date back.
Marie’s Taqueria offers a variety of Mexican favorites including street tacos, burritos, and tortas. Meat options for the dishes include asada, al pastor, carnitas, chorizo, and more.
Combo plates feature flautas and enchiladas, and Marie’s Taqueria also serves carna asada fries, Mexican hot dogs, chips and salsa, queso, guacamole, and Elote en Vaso, or corn in a cup. “All of our frescas are fresh fruit waters that we actually make when you order them,” Bautista told What Now Denver. And for those with a sweet tooth, fresh fruit and mango sorbet ice cream are options.
The original Marie’s Taqueria opened six years ago and is located at 3901 E. 112th Ave. in Thornton. The second location will be at the Outlets Food Pavilion at 13801 Grant St., Unit 501 in Thornton. “When we started our first business, we thought we would open more, and our dream came true,” Bautista said.
Bautista hopes to open additional locations in the future. “We’re hoping to bring authentic food to the community from a smaller restaurant. We have hopes of making it into a chain,” Bautista shared. “We’re not looking back. We’re just trying to open as many as we can.”
