Boulder has a reputation for being a health-conscious city, so residents there are going to love this new eatery. Just BE Kitchen, Colorado’s first and largest gluten-free restaurant and the first Whole30-approved eatery in the state, is coming to 2500 30th St #101, Business Den reports.

The restaurant is proud to offer comfort food free of gluten, refined sugars, and 99% of grains. It’s a welcome place for diabetics, those on a paleo, keto, or whole30 diet, and anyone who wants a hearty, healthy meal. The seasonal menu includes french toast sliders, a “fulfilled burrito”, “cheddar wiz” and chili, chicken and dumplings, mixed veggie curry; and shepherd’s pie.
Just BE Kitchen first started as a farmers’ market stand and later opened in LoHi. The company recently added a DTC spot last year that shares a property with gluten-free brewery Holidaily Brewing Company.
This Boulder space was a never-opened Fresh Thymes bodega, from which the concept was able to acquire items for the kitchen and dining room. It’s a 2,100-square-foot property near the Twenty Ninth Street Mall. It will open daily from 8 AM to 3 PM initially (but will extend hours later on) and have a Mindful Market” section offering grab-and-go items.
“We’ve long had our sights on becoming ‘the Chipotle of gluten-free dining,’ bringing allergen-free food to multiple communities. Our big plans for rapid, yet strategic growth include opening 10 more locations across the country in five years,” said Just BE Kitchen Founder Jennifer Peters in a press release.
Update Feb 2024: Just BE Kitchen is slated to have its grand opening celebration on March 13 from 8 AM – 3 PM with “free goodies, wellness partners on-site, and more.”
