Modern Market — a concept founded in 2009 with the belief that “faster food can be better food” — will debut a store at 12100 E. Colfax Ave. in Aurora (80011), according to a liquor license filed with the city.
Modern Market’s Co-Founder/CEO Rob McColgan told What Now Denver the incoming Aurora location will open in January of 2023 and be corporate-owned as opposed to franchised like many of its other stores.
Modern Market offers an array of health-focused bowls, sandwiches, salads, soups, and even pizzas & sweet treats.
According to the company’s website, its mission is simple: [to] enrich lives with clean, nourishing, and delicious food. This means MM’s fare is made from scratch “all the time,” using real, whole, sustainable ingredients “you can recognize and pronounce.” What’s more, Modern Market focuses on using organic and local ingredients whenever possible.
Despite its fresh-is-best mantra and made-with-care approach, Modern Market considers itself a “fast food” restaurant as they are quick and convenient with “tech-enabled kitchens, super fast ticket times, and seamless digital ordering.”
Modern Market Eatery has handfuls of locations in Arizona, Colorado, Indiana, and Texas.
