Chili Shack, the Mexican restaurant franchise founded by Abraham Olivas, is opening its third location in Denver. The new location is opening in the Federal Plaza East on 2680 W 104th Ave., according to a site plan for the center.

Owning a family-owned restaurant was always a dream for Olivas, ever since he was a child. “His father Ramon Olivas was a previous chef for twenty years. Growing up like this ignited Abrahams joy for learning new authentic Mexican recipes.” And through this joy of cooking, Abraham Olivas founded Chili Shack.

The restaurant’s mascot is an enthusiastic green chili giving us the thumbs up, and their motto is “the new era of green chili in Colorado.”

We weren’t able to reach the restaurant to find out when this new location would be opening, but we can’t wait to taste the Olivas’ family recipes and order anything off the menu with the option to “smother” (by adding cheese and chili) soon.
