Goodly Cookies, owned by Mark Suleiman of Suleiman Holdings in Nebraska, is still working on opening their first Denver location in the Coloradan condominiums at 1750 Wewatta Street.
“We were hoping to be open by Christmas,” Suleiman said when What Now Denver spoke with him on Friday. “But with COVID and getting some materials and things, it looks like it might be more toward the beginning of 2022.”
Although Suleiman’s holding company predominately focuses on real estate, he said hospitality provides a means to capture additional volume. He started out taking over for Tasty Burger, which is the official burger of the Boston Red Sox.
Goodly Cookies came as a little mom and pop shop in Salt Lake City that Suleiman overtook in 2020. Since then, they’ve opened one in every quarter, including another in Salt Lake city and two in Suleiman’s home state of Nebraska.
As for moving to Denver, Suleiman says it just made sense. Since the city lies between Nebraska and Utah where the stores were already located and considering everyone on his team loves it, he thought it was an optimal area to focus on his expansion.
“We’re super excited to build around the area and we just want to be a good presence in the community,” he said. “We’re already working to find alternative sites, too. We’ll start in downtown and branch out from there.”
