Restaurant Opening at Peyton Golf Course

A new restaurant will begin offering American and Mexican fare at Antler Creek Golf Course in Peyton next month. Robin Madera and her husband Juan Madera own four breakfast restaurants called Omelets Etc. in Colorado Springs, and Madera’s Grill and Cantina at the golf course will be a new concept for them.

“We just jumped on the opportunity, and we’re excited to start a different restaurant adventure,” Robin Madera said. Omelets Etc. only offers breakfast and lunch options, but Madera’s Grill and Cantina will be open for lunch and dinner Monday through Saturday and for breakfast on Saturdays and Sundays.

The restaurant will offer space on Sunday evenings for private events. “Weddings, baby showers, quinceañeras,” Robin explained. “They allow us to use the golf course for our private events for taking photos out there by the pond. We have a beautiful patio and outdoor seating with a great view of the golf course,” Robin said.

Madera’s Grill and Cantina will provide the food catering and decorating for private events. “So, we are excited about that,” Robin told What Now Denver.

Madera’s Grill and Cantina will feature an extensive menu. Signature sandwiches are served with fries, onion rings, house salad, or fresh fruit and include options such as the Golf Club Stacker, Philly Griller, and the Chicken Avocado Bacon Melt. Gourmet dogs are another option with choices of the Classic Dog, Reuben Kraut Dog, and the Tex Mex Dog.

Baskets of appetizers, fried chicken strips, cod, shrimp, and more along with refreshing salads, steaks, pork chops, and ribs are also on the menu. South of the border options include the Signature Smothered Burrito, quesadillas, tacos, enchiladas, and crispy rellenos.

A full bar will be available and will include eight to ten specialty margarita flavors developed by Juan. “We’re trying to lean somewhat toward the Mexican items,” Robin said. “We have really good homemade green chile that my husband makes. He’s from Mexico, so it’s different from what you get here.”

Madera’s Grill and Cantina will be located at 9650 Antler Creek Dr. in Peyton.
